Berkshire Pork: In 2009, we expanded Drover Hill Farm’s meat selections to include high-quality pork using the same production goals as our beef:
Since including pork in the Drover Hill Farm meat selections, we have switched to Berkshire breed pigs. Though Berkshires take longer to mature because of their indigenous, open-pasture diet, the product is known for its superior marbling, tenderness, and buttery flavor. Berkshires are a heritage breed pig, which indicates that they have been raised for meat for hundreds of years, but because of their longer maturation time, are not suitable for commercial farming purposes. As a result, the Berkshire bloodline is at risk of being lost. The best way to preserve the high-quality meat produced by Berkshires is to continue to buy Berkshire meat products to ensure a demand. We invite you to taste the high-quality meat produced by Berkshire breed pigs in one of our pork products: pork chops; pork steak; shoulder roast; country style ribs; spare ribs; ground pork; breakfast sausage links, patties, or bulk; sweet, hot, or garlic sausage; kielbasa; naturally smoked bacon or cottage bacon; naturally smoked ham roast; or smoked ham steak. Our Sheep: In addition to beef and pork, we also tend to a small flock of sheep. They are a meat breed and are ideal for producing tender, mild, and delicious meat. In order to maximize the quality of the meat and the health of the animal, we raise and finish our sheep naturally on a combination of high quality pasture, hay, and grains. As with our other products, we do not use growth hormones or sub-therapeutic antibiotics We receive the chicks the day after they are hatched. In order to maximize the quality of the meat and the health of the animal, we raise and finish our chickens naturally on a combination of high quality pasture and locally sourced feed to supplement their diet. They have access to grass at all times, and all the bugs they can find as part of their diet. We find that birds raised this way are extremely healthy and happy. All our cuts are vacuum-sealed.
